Italian Baked Fish

I had never really cooked with fish until I came to Quebec. I’m no stranger to cooking for myself but fish had always seemed a bit of mystery to me. Alas with a kilogram of chicken breast costing over $20, I knew I needed to venture into the waters of cooking fish. Specifically, the cheap frozen kind.
Luckily I had Jamie Oliver to save me. I browsed his website and was inspired by a few recipes but altered them so I didn’t have to buy so many ingredients #brokeunistudentlyf
4 fillets of white fish
1 bulb of garlic
20 black olives
2 tbsp capers
400g tinned tomato
1 salad onion
2 tbsp olive oil
1 tbsp vinegar (balsamic or apple cider)
1. Preheat oven to medium heat.
2. Peel garlic and chop onion into thin slices.
3. Place fillets on baking tray and cover with tomato, onion, capers, garlic, olives, oil and vinegar.
4. Cook for 30 minutes or until fish is through.
I’ve been lowkey living off this as my lunch every other week. Served with some cooked veggies on the side and homemade sauerkraut or brown rice, it’s cheap delicious eats.
